Choc Chip Banana Cake

Banana cake is something that only psychopaths don't enjoy, and my healthier, vegan version of this classic recipe may even convert them. It's quick to make, tastes great and if made using a Bundt tin, also doubles as a hat. Tummy full, fashion needs met.

Ingredients

  • 2 cups spelt flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 cup shredded coconut
  • 150g chocolate chips
  • 3 bananas, mashed
  • 2/3 - 3/4 cup maple syrup (to taste, depending on how sweet you would like it)
  • 1 1/2 cups oat milk, or vegan milk of your choice

Instructions

  • Preheat oven to 175 degrees Celsius and grease a Bundt tin
  • In a large bowl, combine flour, baking powder, bicarbonate of soda, coconut and chocolate chips
  • In a smaller bowl or jug, combine banana, maple syrup and milk
  • Pour wet ingredients onto dry ingredients, and carefully mix until just combined
  • Pour into prepared tin and hit against kitchen counter to remove air bubbles
  • Bake for approximately 40 minutes, or until an inserted skewer comes out clean
  • Remove from oven and leave to cool completely
