Chocolate Banana Bread

This recipe is a delicious alternative to a classic banana bread, using cocoa and coconut to give it extra depth. It's vegan, refined sugar free, and can be eaten the same way as a regular banana bread: fresh or toasted, with or without spread, and in one, guilty sitting. Enjoy!

Ingredients

  • 1 ¼ cups self-raising flour
  • 2/3 cup cocoa
  • 1 tsp baking powder
  • 1 tsp ground vanilla beans
  • 2 bananas, mashed
  • 3/4 cup agave
  • 1/3 cup melted coconut oil
  • 1 tsp apple cider vinegar
  • Shredded coconut, to garnish

Instructions

  • Preheat oven to 175 degrees Celsius and line a loaf tin
  • In a large bowl, combine flour, cocoa, baking powder and vanilla beans
  • In a separate bowl, combine banana,agave, coconut oil and vinegar
  • Combine wet and dry ingredients
  • Pour batter into prepared loaf tin and top with coconut
  • Bake for 30 minutes or until mixture bounces back when pressed
  • Remove from oven and leave to cool
