Creamy Twix Slice

I don't think you can ever have too many snacks in the house. What if you have unexpected guests? What if you decide you're too lazy to make lunch? What if you watch an emotional video of an abused puppy finally finding his forever home? Snacks are a vital part of life, and my Creamy Twix Slice is sweet, rich and healthier than any store bought treats. Made with Medjool dates, gooey peanut butter and crunchy raw nuts, you can be as lazy and well fed as you want.

Ingredients for the base

  • 3/4 cups raw mixed nuts
  • 1 1/2 cups rolled oats
  • 1/2 cup melted coconut oil
  • 1 tbs agave

Ingredients for the caramel

  • 1 cup Medjool dates, soaked until soft (1 tbs of water reserved)
  • 1/4 cup smooth peanut butter
  • 1/8 tsp salt

Ingredients for the chocolate

  • 1/2 cup coconut oil
  • 1/3 cup cacao
  • 1 tbs agave

Instructions for the base

  • Preheat oven to 180 degrees Celsius and line a square or rectangular baking tray
  • In a food processor, pulse base ingredients until crumbly and coming together
  • Press down evenly into baking tray and bake in oven for 20 minutes, or until starting to brown
  • Remove from oven and leave to cool

Instructions for the caramel

  • Combine all caramel ingredients in a food processor and blitz until smooth
  • Carefully spread over base and place in fridge to set

Instructions for the chocolate

  • Combine all chocolate ingredients over a low heat until smooth
  • Pour over caramel and place in fridge to set
  • Cut into slices and enjoy!
