Crunchy Cacao Brownie Bites

Cacao is one of my favourite ingredients, and not just because it provides a fabulous substitute for chocolate. When used in brownies, biscuits and cakes, it adds an almost gritty texture and more bitter flavour, which tastes great with an ingredient like peanut butter. My Vegan Crunchy Cacao Brownie Bites are a variation of traditional brownies, are very crunchy and make for a delicious treat. Enjoy!

Ingredients

  • 250g plain unbleached flour
  • 100g cacao
  • 250g caster sugar
  • 100g brown sugar
  • 280ml canola oil
  • 100ml soy milk
  • 1 tbs flaxseed meal soaked in 2 1/2 tbs water for at least 20 minutes
  • 50g vegan chocolate chips
  • 100g walnuts
  • 50g peanut butter

Instructions

  • Preheat your oven to approximately 180 degrees Celsius and line a square cake tin
  • In a large bowl, combine flour, cacao and sugars
  • Fold in oil, milk and flaxseed meal
  • Add chocolate chips and walnuts, and stir until just combined
  • Pour brownie mixture into prepared tin and top with spoonfuls of peanut butter
  • Bake for approximately 35 minutes or until the top of the brownies are dry
  • Leave to cool and and cut into pieces before serving
