Crunchy Oat Bars
What a time to be alive. We can actually ingest crunchy, filling and sweet treats, without even the hint of an animal product or a highly refined sugar. And who doesn't love a muesli bar?! This recipe is so quick to prepare you could *almost* make it before leaving for work, and it's packed with enough nourishing ingredients, it'll leave you with that glow you only get after seeing a puppy learn to walk down stairs. As usual, substitute the nuts, seeds and dried fruits as desired.
Ingredients
- 1 1/2 cups rolled oats
- 1 1/2 cups desiccated coconut
- 1/2 cup wholemeal self raising flour
- 2 tbs chia seeds
- 1/3 cup sunflower seeds
- 1/2 cup raw mixed nuts, chopped
- 1/4 cup goij berries
- 1/3 cup crimson raisins
- 2/3 cup rice malt syrup
- 1/3 - 1/2 cup coconut oil, melted
- 2 tbs smooth peanut butter
Instructions
- Preheat oven to 180 degrees Celsius and line a rectangular baking tray
- In a large bowl, combine all ingredients and mix well
- Press mixture evenly into baking tray and place in oven
- Bake for 30 minutes or until brown and firm to the touch
- Remove from oven, leave to cool, then cut into slices to serve
