Easy Black Bean Brownies

Black beans are fast becoming my fifth best friend. I mean sure, they don't watch Survivor with me or take me out to lunch, but they consistently provide me with savoury delights, and now, form the basis of my new favourite brownie recipe. This recipe is so quick and easy to make, is low in sugar, and provides a wonderfully spiritual eating experience. Rich and sweet and as fabulous as my fantastic friends.

Ingredients

  • 1 x 400g tin of black beans, drained and rinsed
  • 2 flax eggs (2 tbs flaxseed meal soaked in 5 tbs warm water)
  • 1 cup cocoa
  • 1/2 tsp ground vanilla beans
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup water

Instructions

  • Preheat oven to 170 degrees Celsius and prepare mini cupcake tin with 24 cases
  • Using a blender or food processor, combine all of the ingredients until smooth
  • Pour equally into cases and lightly tap cupcake tin against the kitchen counter to remove any air bubbles
  • Bake in oven for approximately 20 minutes, though cooking time may vary so keep a close eye on them
  • Remove from oven and allow to cool completely before devouring
