Frozen Coconut, Raspberry and Blueberry Cake

I tried this recipe a month ago and loved the idea, so developed my own version! This is my Frozen Coconut, Raspberry and Blueberry Cake, which is vegan, requires no cooking, is dairy free, gluten free, refined sugar free and just a goddamn good cake. This is another recipe developed with Naked Foods in Newtown, using their rice malt syrup, ground vanilla beans, dates (YUM!), rolled oats and cacao. With a recipe like this, it's worth investing in good quality nuts, dried fruit and spices, especially if you plan on making it for a celebration (but let's be honest, it's all for you). I hope you enjoy making and eating it as much as I do!

Ingredients

  • 650ml coconut cream
  • 1/3 cup rice malt syrup, or a liquid sweetener of your choice
  • 1 tsp ground vanilla beans
  • 1 banana
  • 1 cup frozen raspberries
  • 1 cup frozen blueberries
  • 1 cup dates
  • 3/4 cup oats
  • 1/2 cup raw nuts
  • 1 tsp vanilla
  • 1 tbs coconut oil
  • 1 1/2 tbs cacao
  • Desiccated coconut to decorate

Instructions

  • Grease bundt cake tin with vegan butter or coconut oil, and line with plastic wrap
  • Place coconut cream, rice malt syrup, vanilla and banana in a blender, and blitz until smooth
  • Stir in raspberries and blueberries and pour into prepare cake tin
  • Freeze for at least 4 hours, or until mixture is completely solid
  • In a food processor, combine dates, oats, nuts, vanilla, coconut oil and cacao and blitz until the mixture comes together. Chunky is okay!
  • Remove frozen cake from the freezer and press date mixture onto the exposed part of the cake (when you flip the cake and remove it from the cake tin, the biscuit will be on the bottom)
  • Return to freezer for at least half an hour to set
  • When you're ready to serve (or more likely, eat), take cake out of the freezer and leave for 15 minutes to thaw
  • Flip cake tin over a large plate and lightly tap tin if you're having trouble removing your cake
  • Sprinkle with coconut and enjoy!

Notes

  • You can add more sweetener if you'd prefer something sweeter - I try to limit the sweetener but adjust to taste!
