I tried this recipe a month ago and loved the idea, so developed my own version! This is my Frozen Coconut, Raspberry and Blueberry Cake, which is vegan, requires no cooking, is dairy free, gluten free, refined sugar free and just a goddamn good cake. This is another recipe developed with Naked Foods in Newtown, using their rice malt syrup, ground vanilla beans, dates (YUM!), rolled oats and cacao. With a recipe like this, it's worth investing in good quality nuts, dried fruit and spices, especially if you plan on making it for a celebration (but let's be honest, it's all for you).
