Fudgy Vegan Brownies

I get so excited when I find a chocolate treat that can be veganised, and these brownies are a particular favourite of mine. They're rich, fudgy and can be adapted to include anything you like! These are definitely not healthy and should be eaten...well, who am I tell to you when you can and can't eat brownies? Just make sure you do it right: with vegan ice cream and chocolate sauce!

Ingredients

  • 260g plain flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 50g cocoa
  • 225g caster sugar
  • 75g brown sugar
  • 1/2 cup walnuts, chopped
  • 100ml vegan milk
  • 270ml vegetable oil
  • 1 tsp vanilla essence
  • 1 vegan egg (I like using flax eggs: 1 tbs ground flaxseed soaked in 2 tbs water)
  • Vegan chocolate chips, nuts or coconut to decorate

Instructions

  • Preheat oven to approximately 175 degrees Celsius and grease and line a square or rectangular baking tray
  • Sift flour, baking powder, cinnamon and cocoa, and combine with sugar and walnuts in a large bowl
  • Mix milk, oil, essence and the vegan egg in a jug, and slowly pour into dry mixture
  • Fold wet mixture into dry mixture until just combined
  • Pour batter into prepared pan and sprinkle on any toppings
  • Bake for 20-30 minutes, or until as firm as you like them (I like my brownies fudgy on the inside, so I didn't bake mine for too long!)
  • Remove from oven and leave brownies to cool slightly before serving with your favourite vegan ice cream!
