Healthier Oatmeal and Raisin Cookies

I think Cookie Monster said it best: 'Today me will live in the moment, unless it's unpleasant, in which case, me will eat a cookie.' This recipe is perfect for the vegan looking for a healthy, plant based cookie, that even our friend Cookie Monster would enjoy. Mildly spiced, lightly sweetened and crunchy, my Healthier Oatmeal and Raisin Cookies are a great option for last minute guests or a morning tea treat.

Ingredients

  • 2 cups rolled oats
  • 2 cups flour (any flour is fine, but I like spelt or buckwheat)
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1 cup raisins
  • 1 cup hard coconut oil
  • 1/2 - 3/4 cup agave
  • 1/2 cup water

Instructions

  • In a large bowl, combine oats, flour, baking powder, bicarbonate of soda, cinnamon, nutmeg, ginger and raisins
  • In a smaller bowl, beat together oil and rice malt syrup until smooth, and pour onto oat mixture, along with water
  • Mix together until just combined
  • Wrap mixture in cling wrap and leave to rest in the refrigerator for 1 hour
  • Preheat oven to 180 degrees Celsius, and line a baking tray with baking paper
  • Roll mixture into balls (big or small - either will work!), and press down onto prepared tray
  • Bake for approximately 20 minutes or until cookies are brown, leave to cool and enjoy!
  • Refrigerate for 1 hour
