Healthier Vegan Snickers Slice
I seldom crave meat. I cut out red and white meat in 2008, and enough time has passed for my taste buds to completely adjust to life without it. It took me longer, however, to remove dairy from my diet, and these cravings seem to show up more regularly. That, coupled with my desire not to end up too wide to easily exit my house, led to the creation of my Healthier Vegan Snickers Slice. It tows the line between raw and baked, sugar free and sugar drenched, and healthy and heart attack inducing. It's messy, delicious and cruelty free, so get into it!
Ingredients for the base
- 1 cup raw walnuts
- 1 cup sultanas
- 1/2 tsp ground vanilla beans
Ingredients for the caramel
- 1 cup dates, soaked in water
- 1/2 cup coconut cream
- 1/4 tsp sea salt
- 1 cup raw or roasted peanuts
Ingredients for the chocolate
- 150g vegan chocolate, lightly salted
Instructions for the base
- 1In a food processor, blitz together walnuts, sultanas and vanilla until crumbly
- 2Press down on a piece of baking paper to form a rectangular base
Instructions for the caramel
- 3In a food processor, combine dates, coconut cream and salt until smooth and creamy
- 4Evenly spread over walnut base
- 5Top with peanuts
Instructions for the chocolate
- 6Melt the chocolate and pour over caramel and base so that they are completely covered
- 7Place slice in freezer for 20 minutes or until firm
- 8Cut into slices, add extra peanuts and enjoy!
