Healthy Berry Slice

As regular readers know, dessert is my favourite meal of the day. I often think about how surprisingly easy it was for me to become vegan, and yet how difficult I find it to skip dessert. Sure, dessert may not be the best thing for my teeth or waistline, but eating animal products has such a huge impact on the world around me, cutting it out and continuing to do so is easier than ever. As for dessert, we forge on!

My Healthy Berry Slice makes dessert much less sugary but still all kinds of sweet. The recipe uses very little sugar (but you can certainly add more, to taste) and is packed with wholesome, healthy ingredients. It freezes well and tastes great as a morning tea treat. 

Ingredients for the base

  • 210g almond meal
  • 60g desiccated coconut
  • 50g rolled oats
  • 1 tbs coconut sugar, or more if you'd like it sweeter
  • 1 tbs almond milk
  • 2 tbs flaxseed meal mixed with 4 tbs warm water

Ingredients for the filling

  • 350g mixed berries, fresh or frozen
  • 235g apples of your choice (approximately 2 apples)
  • 70ml water
  • 1 tsp lemon rind

Ingredients for the crumble

  • 150g rolled oats
  • 50g desiccated coconut
  • 1/2 tbs cinnamon
  • 1 tbs liquid sweetener (I use date syrup but maple syrup or rice malt syrup would also work well), or more if you'd like it sweeter
  • 2 1/2 tbs vegan butter or cold coconut oil

Instructions for the base

  • Line a baking tray with baking paper and preheat oven to approximately 190 degrees Celsius.
  • Place all ingredients into a food processor and blend until it's smooth and has come together.
  • Press into prepared tray and place in the oven.
  • Cook for 10 minutes then remove from the oven and set aside.

Instructions for the filling

  • Place all ingredients into a saucepan and cook over a medium heat until mixture is thick and there is only around 1 tbs of liquid left.
  • Pour mixture onto prepared base and set aside.

Instructions for the crumble

  • Place all ingredients into a food processor and blitz until mixture just comes together but still resembles thick crumbs.
  • Crumble mixture over the filling and place in the oven.
  • Place the slice into the oven and cook for approximately 20 minutes, or until crumble has started to brown.
  • Serve cold and store in the fridge.
