Healthy Lamington Balls
A raw, vegan, refined sugar free, dairy free and gluten free treat that tastes great and is great for you. It's simple to make and tastes as much like a lamington as a raw food ball could possibly taste!
Ingredients
- 80g dates
- 1 cup water
- 50g cashews
- 17g shredded coconut
- 17g coconut flour
- 30g golden raisins
- 10g cacao
- Dessicated coconut, to coat
Instructions
- 1Place dates in a bowl and cover with water and leave to soak for 1/2 hour
- 2Remove dates, cut them in half, and soak for another half an hour. Once completed, remove the dates but reserve 3 tbs of the date juice
- 3Combine cashews, coconut, raisins and cacao in a food processor until starting to stick together. It's okay to have some chunks in the mixture at this stage
- 4Add the dates to the mixture and whilst the motor is running, slowly pour in the date juice until the mixture is sticking together
- 5Roll into balls and cover with dessicated coconut
