Maple Sesame Tofu

I usually reach for the tofu when I'm really craving something meaty. It's not so much the taste of meat that I miss, but more the hankering to ingest something packed full or protein. This is a great recipe for making sweet and gingery tofu, and can be enjoyed in a stir-fry, on a vegan BLT, or even on its own. And if anyone tells you that tofu is disgusting whilst you're eating it, be sure to ask your gang of rescued farm animals to teach them a lesson.

Ingredients

  • 1 tbs sesame seed oil
  • 1 tbs rice vinegar
  • 1 tsp finely chopped ginger
  • 1 tsp minced garlic
  • 1 tbs soy sauce
  • 1 tbs sesame seeds
  • 1 tbs maple syrup
  • 450g firm tofu
  • 2 stems of broccoli
  • 200g button mushrooms
  • Soy sauce, to taste
  • Rice or quinoa, to serve

Instructions

  • In a hot pan, place oil, vinegar, ginger, garlic, soy sauce, sesame seeds and maple syrup
  • Cook for 5 minutes or until mixture starts to brown
  • Cut tofu into squares, add to pan and cook for 10 minutes, flipping throughout to brown all over
  • Remove tofu from pan and set aside
  • Using the same pan, cook broccoli, mushrooms and soy sauce for 5-10 minutes
  • Serve tofu, broccoli and mushrooms with rice or quinoa, and enjoy!
