No Bake Lime and Matcha Tart

Matcha is one of those ingredients that suddenly seems to be appearing in everything, and frankly, thrown into a cup of boiling water is not my idea of a sophisticated way to enjoy it. This recipe combines zesty lime, creamy cashews and hint of matcha tea blend to create a super healthy, light and tasty slice. It stores in the freezer so you can eat some now and save the rest for your hipster friends who are visiting next month. Matcha later!

Ingredients for the base

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 tbs chia seeds
  • 1/2 cup raw mixed nuts
  • 1/2 cup raisins
  • 3 tbs warm water

Ingredients for the filling

  • 1 cup cashews, soaked for at least 2 hours
  • 1 cup water
  • 1 cup dates, soaked for at least 2 hours
  • The zest and juice of 2 limes
  • 1 tbs matcha tea blend (powder or leaves - either works!)
  • A handful of spinach

Instructions for the base

  • Grease a baking tray and line with baking paper. Set aside
  • Place oats, coconut, chia seeds, nuts, raisins and water in a food processor and blend until mixture comes together
  • Press mixture into prepared tray and place in the fridge to set

Instructions for the filling

  • Place cashews and water in a food processor and blend for 5 minutes
  • Add dates, zest, juice, tea and spinach, and blend for a further 5 minutes, or until mixture is completely smooth
  • Spread mixture evenly over base, sprinkle with extra coconut if desired, and place in the freezer to set for at least 1 hour
  • Thaw for 15 minutes before serving
