Nutty Seed Bread

As someone who has had an intense affair with bread for some time now, I'm always looking for a healthier way to enjoy this carby pleasure. This recipe is not only free of dairy, sugar and gluten, but is packed full of delicious seeds and nuts. I like to enjoy this bread with avocado and tomato, but I'll understand if you just shove the whole thing into your mouth, hot from the oven. Mouth burns, here we come!

Ingredients

  • 1/2 cup almonds
  • 1 1/2 oats
  • 1/2 cup lin seeds
  • 1 cup sunflower seeds
  • 4 tbs flaxseed meal
  • 1 tbs Italian herbs
  • 1 tbs cumn
  • 1 tsp nutritional yeast
  • Salt and pepper, to taste
  • 3 tbs coconut oil
  • 1 1/2 cups water

Instructions

  • Grease a loaf tin with coconut oil
  • Combine almonds, oats, lin seeds, sunflower seeds, flax seed meal, Italian herbs, cumin, nutritional yeast and salt and pepper in tin and push down firmly
  • Combine coconut oil and water in a jug and carefully pour over dry mixture in tine
  • Leave mixture at room temperature for approximately four hours, or until mixture is thick and liquid has been well absorbed
  • Bake at 175 degrees Celsius for 40 minutes or until firm
