Peach and Tapioca Pudding

As satisfying as a it may be to decorate a cake, sometimes you just want a dessert that's quick, easy and light. My Peach and Tapioca Pudding takes around 25 minutes, requires a handful of ingredients and makes for a healthier after dinner snack. Enjoy making a recipe that's short and sweet, not unlike my terribly cute Miniature Schnauzer.

Ingredients

  • 2/3 cup tapioca pearls
  • 1 1/2 cups coconut milk
  • 1 tsp vanilla
  • 1/4 cup agave
  • 400g tinned peaches, drained
  • Coconut cream and shredded coconut to top, if desirednut if desired

Instructions

  • In a small saucepan over a low heat, combine tapioca pearls, coconut milk and vanilla
  • Stir frequently until liquid is absorbed and balls have expanded
  • Remove from heat and leave to cool
  • In a food processor, blend peaches and agave until smooth
  • Once tapioca balls have cooled, spoon into a glass or jar and top with peach mixture, coconut cream and shredded coco
