Raw Chocolate Mousse Tarts

Don't you get a smug sense of satisfaction when you eat a dessert that tastes great, isn't made using processed ingredients, AND is packed full of things that are actually good for you? I sure do, and you just can't wipe that smug grin off my cacao stained face. I hope you enjoy my Raw Chocolate Mousse Tarts are much as I do, which are vegan, refined sugar free, raw and gluten free. The base is made using nuts, dried fruit and coconut, the filling is a delicious banana and avocado mousse, and the topping is a simple whipped coconut cream. Easy, healthy and delightful.

Ingredients

  • 1 cup + 1 tbs shredded coconut
  • 1 cup raw mixed nuts
  • 1/4 cup raw cacao powder
  • 1/2 cup dates
  • 1 tbs coconut oil
  • 1 tbs warm water
  • 1 avocado
  • 1 large banana or 2 small ones
  • 1/2 cup cacao
  • 1/2 - 1 cup date paste, to taste
  • 1 tsp ground vanilla beans
  • 2 cups coconut cream
  • Dessicated coconut, crushed nuts, banana etc. to serve

Instructions

  • Prepare 1 medium sized or 8 small tart tins
  • Combine coconut, nuts, cacao, dates, coconut oil and water in a food processor and blitz until mixture starts to come together but is still crumbly
  • Press biscuit base into cake tin and place in the fridge until firm
  • Place avocado, banana, cacao, date paste and ground vanilla beans in a food processor and blitz until smooth. I recommend adding date paste slowly and tasting as you go, to determine how sweet you like it
  • Spoon avocado mousse into tart cases and return to fridge for 40 minutes
  • Whip coconut cream and pour over avocado mousse, and return to fridge until you're ready to serve

Notes

  • Serve with your favourite fruit, nuts and toppings!
