Raw Fudgy Brownies
Vegan brownies are so easy to make, and in my experience often taste better than their non-vegan counterparts. It turns out, raw, refined sugar free vegan brownies, are also completely delicious! I know, I know, the words, 'raw' and 'refined sugar free' don't exact elicit feelings of culinary desire, but trust me when I say, these brownies are fabulous. They're easy to make and easy to eat, so what are you waiting for?
Ingredients
- 1 1/2 cups raw nuts, soaked for at least 2 hours
- 1/2 cup dates, soaked for at least 2 hours
- 1/2 cup cacao or cocoa
- 1/4 cup coconut oil
- 2 tbs peanut butter
- 1/2 cup + 2 tbs water
- Shredded coconut, nuts or toppings of your choice, optional
Instructions
- 1Combine all ingredients in a high speed blender until smooth (though a few chunky bits are okay - I like mine to have a few crunchy nuts!)
- 2Pour into a square cake tin and smooth with a spatula
- 3Add optional toppings to your brownie mixture and place in the fridge to set, at least 3 hours
- 4Store in the fridge or freezer
