Sherry Cherry Ripes

Healthier than the store bought variety, these are a lovely mix of sweet sherry, juicy cherries and dark chocolate. I make these with 85% chocolate for a richer flavour, but make it with a lighter chocolate and add more sweetener if desired. Happy snacking!

Ingredients

  • 1 x 300g bag frozen cherries, drained
  • 2 cups shredded coconut
  • 2 tbs maple syrup
  • 1/2 tsp sherry
  • 1/4 cup almond meal
  • 200g dark chocolate

Instructions

  • Prepare a tray or plate for the freezer by lining with baking paper
  • Place frozen cherries (they must be drained first) into a food processor, along with coconut, maple syrup and sherry. Blitz until mixture comes together but is still chunky
  • Add almond meal and blitz a few more times until mixture comes together
  • Wearing disposable gloves (to avoid mess!), mould mixture with your hands to create small rectangular shapes, squeezing an extra moisture out in the process
  • Place cherry mixture onto prepared baking paper, and place in the fridge to set for 1 hour
  • Once mixture is frozen it will be easier to handle, though it still may be fragile so handle carefully. Melt chocolate and pour over mixture, and carefully paint the bottom of each cherry ripe with chocolate, too
  • Place in the fridge to set for a further hour. Serve or store in the fridge for later!
