Superfood Seed Cookies

The only thing I value more than devouring Oreos and watching Survivor, is being able to smugly show people how healthy veganism can be. To that end, I have created my Superfood Seed Cookies, which are refined sugar free, dairy free, egg free and packed with so many amazing ingredients you'll practically glow after just one bite. They aren't very sweet so feel free to add more dried fruit if you swing that way, or substitute the spices and seeds for whatever you have in your pantry.

Ingredients

  • 120g rolled oats
  • 85g desiccated coconut
  • 120g sultanas
  • 20g black chia seeds
  • 20g pumpkin seeds
  • 20g sunflower seeds
  • 1 tsp cinnamon
  • 1 tbs crunchy peanut butter
  • 100ml almond milk
  • 130g mashed banana (approximately 1 large banana)
  • 2 tbs flaxseed meal mixed with 5 tbs warm water (set aside for 15 minutes prior to using)

Instructions

  • Preheat oven to approximately 200 degrees Celsius and line a baking tray with baking paper
  • In a large bowl, place coconut, sultanas, seeds and cinnamon, and mix to combine
  • Add peanut butter, milk, banana and flaxseed mixture, and mix until all ingredients are well combined
  • Roll mixture into balls and slightly flatten on prepared tray
  • Bake in the oven for approximately 30 minutes, and store in an airtight container at room temperature
