Vegan Chocolate Chew Bars

After staring enviously at a friend of mine eating an LCM bar every day at work, I decided I needed to create my own, healthy version of the chewy snack. My Vegan Chocolate Chew Bars are vegan (as the same so clearly indicates), gluten free and only use a half a cup of rice malt syrup, so are an excellent alternative to the highly processed store bought varieties. You may want to experiment with different nut butters and puffed grains, but be sure to eat them loudly as you spill chewy chocolate down your new white shirt.

Ingredients

  • 3 cups puffed brown rice
  • 1/2 cup rolled oats
  • 1/3 cup cacao
  • 1 tsp ground vanilla seeds
  • 4 tbs peanut butter
  • 2 tbs almond butter
  • 1/2 cup rice malt syrup
  • 1 tbs coconut oil
  • Pinch of salt
  • 1/2 cup shredded coconut

Instructions

  • Grease a baking tray with baking paper
  • Combine puffed rice, oats, cacao and vanilla in a large bowl
  • In a small saucepan over a low heat, melt peanut butter, almond butter, rice malt syrup, coconut oil and salt
  • Pour melted mixture over dry mixture and mix until well combined
  • Press mixture into prepared tin and sprinkle coconut on top
  • Refrigerate for 2 hours or until firm, and cut into slices when ready to eat
