Vegan Crepe Cake

Made with my lovely friends from Nature's Charm, this recipe is easy, tasty and the perfect celebration treat. My Vegan Crepe Cake combines a stack of crepes made using my classic recipe, layered with Nature's Charm Coconut Whipping Cream and topped with Nature's Charm Chocolate Fudge Sauce (links to products in the list of ingredients).

You can make the crepes in advance to save time before a special event, and serve with your favourite vegan ice-cream. Totally cruelty-free and delicious!

Instructions

  • Make crepes as per recipe instructions.
  • Place crepes into the fridge to cool completely. Trim crepes if they're uneven by placing a plate on top of the stack and using it as a guide.
  • Once crepes are cool, whip up coconut cream with a handheld or stand mixer until soft peaks form.
  • Place one crepe onto a plate, top with coconut cream and top with the next crepe. Repeat the pattern until there is one crepe left, which should sit on the top.
  • Warm fudge sauce and drizzle of crepe stack just before serving.
  • Cut into pieces and store in the fridge.
