Vegan Tim Tams

If you're a vegan missing chocolate biscuits, sweets or Tim Tams (or just a human being with taste buds), you'll love my Vegan Tim Tams. They're made with a crunchy biscuit base, a creamy filling and a rich coating, and taste just as good as the real thing. They freeze well if you can manage to stop before the entire batch is gone. Ingredients for the biscuit base

  • 120g vegan butter
  • 100g caster sugar
  • 40g cocoa
  • 160g plain flour (gluten free flour optional)
  • 1/2 tsp vanilla
  • 2 tbs vegetable oil

Ingredients for the filling

  • 100g vegan butter
  • 100g icing sugar
  • 25g cocoa
  • 1/2 tsp chocolate essence

Ingredients for the chocolate coating

  • 200g vegan chocolate (I use 70%)
  • 1/2 tbs vegetable oil

Instructions for the biscuit base

  • Preheat oven to 170 degrees Celsius and line a biscuit tray with baking paper
  • Using a stand or handheld mixer, beat butter and sugar for approximately 1 minute or until combined
  • Add cocoa, flour and vanilla and beat for a further 2 minutes
  • Add oil and beat until mixture comes together, scraping down the sides to ensure all mixture is incorporated
  • Press down evenly into prepared tray, measuring 20-30cm in length
  • Bake for 30 minutes or until firm to the touch, remove from oven and leave to cool
  • Once completely cooled, cut into small rectangles

Instructions for the filling

  • Using a stand or handheld mixer, beat all ingredients together until smooth
  • Spread every second biscuit with filling mixture, about 1/2cm in thickness
  • Place unfilled biscuit on top of filling, pushing down lightly
  • Place in the fridge for 30 minutes

Instructions for the chocolate coating

  • Melt chocolate and oil until smooth
  • Dip biscuits into chocolate until they are completely coated and place in fridge to set
