Vegan Twix Slice

I was craving something sweet last week and was missing the sugary junk food I used to indulge in too much. I knew I didn't want to go back there, but still wanted to satisfy my craving. Feeling inspired, I created this recipe for a Vegan Twix Slice, which has a crumbly cookie base, a soft caramel filling and a rich chocolate top. The recipe is vegan and can be made gluten free, and is low in refined sugar. Delicious and satisfying, without the guilt!

Ingredients

  • 225g vegan butter (I use Nuttelex)
  • 210g plain unbleached flour
  • 120g rice flour
  • 600g date paste
  • 1 tbs ground vanilla beans
  • 100g raw cashews
  • 100g 85% dark chocolate, melted

Instructions

  • Preheat oven to 170 degrees Celsius and grease a square or rectangular cake or baking tin
  • To make cookie mixture, beat butter for 1 minute or until smooth in a medium sized bowl
  • Pour over plain and rice flour over butter, and beat for another 30 seconds
  • Bring mixture together using a wooden spoon and press into prepared tin
  • Bake for 20 minutes or until lightly browned
  • Whilst cookie mixture cools, combine date paste with vanilla beans to make caramel mixture
  • To prepare slice, sprinkle cashews over cookie base
  • Spread date paste over cashews and pour melted chocolate on top of date paste
  • Sprinkle with salt if desired, and leave in the fridge for at least 1 hour to set
