While these tarts may not have the sharpest look, they taste incredible. Perfect for parties, appetizers or hungry vegans.

My first time cooking with the magical banana blossom was a SUCCESS! The texture of this mysterious flower is perfect for vegan fish, and I'm already planning all of the other recipes I can adapt to include it, like curries, cutlets and buddha bowls.

Made using Nature's Charm Banana Blossom, my Vegan Fish and Chips recipe is really easy to follow and pretty quick to make, and serves (pardon the pun) as such a lovely, comforting and indulgent dinner or lunch. Between tempeh, tofu, jackfruit and banana blossom, it's an exciting time to be a vegan!

There are only a few types of 'fake' meat I've really enjoyed since going vegan, and I've actually become quite fond of veggie balls, patties and burgers made with beans, spices and veggies rather than faux meat. Sometimes, however, to truly recreated the texture and essence of a dish, you need a substitute that's been custom built. Suzy Spoon's Shredded Seitan is PERFECT for replicating chicken, beef or any really meaty dish, and I was so excited to be able to design my own interpretation of Mongolian Beef using this new product. If you're craving something meaty this is exactly the recipe for you. Visit their website here for their full range of vegan products!

If you can't find spirulina noodles, use another type of noodle like vermicelli or udon.

My Crispy Cauliflower Bowls recipe is a wonderful addition to the vegan kitchen, and is a regular in my house because it's made up for some of my favourite ingredients, tastes AMAZING and is an easy to make and healthy dinner option. Cauliflower, sweet potato, edamame and other ingredients made it a great meal for vegans, vegetarians or those of you trying to eat less meat, as it'll leave you feeling satisfied, satiated and full of plant-based goodies that make up a complete, meat-free diet. If you're eating this as a main the recipe makes two full portions, but it can feed a couple more if you've got other dishes, too.

If you're anything like me, you're always looking for new ways to enjoy nature's greatest gift: the sweet potato. It makes such a great base for vegan meals (as well as an excellent side), and this recipe is no exception. All you need are a couple of pantry items, some veggies and of course, sweet potato, to create a healthy, irresistible, plant-based meal. You can prepare most of the elements in advance if you're serving a large group, and experiment with fillings, flavours and toppings.

This is one of my FAVOURITE salad recipes, because it combines all of my must-have elements: it's healthy, crunchy, packed full of flavour and vegan. If you don't have kelp noodles you can substitute them for vermicelli, but I'd highly recommending trying to get your hands on some as they provide such a lovely texture to this crowd-pleaser. Make a big batch and enjoy it throughout the week, and definitely serve it at your next dinner party with some grilled tofu, smashed avocado and sweet potato fries. Yum!

I'll get straight to the point. This is a recipe for the day you come home late from work, starving, not sure what to make and with little time to make it. It uses spices you probably already have, pantry items most vegans always have on hand, and veggies that come fresh or frozen. The beauty of this recipe is that most of the ingredients can spices can be substituted for what you do have (and if you have fresh garlic and ginger, even better!), as long as you stick with the general recipe structure. Perfect for a cozy night in!

Vegan Caesar Salad with Maple Tempeh and Sesame Parmesan

Vegan Caesar Salad with Maple Tempeh and Sesame Parmesan

Vegan Caesar Salad with Maple Tempeh and Sesame Parmesan

  • 40 ' Prep. Time

Years ago, Caesar salads were a regular part of my diet. I recall taking a break from my very first casual job and buying a creamy salad and a strawberry milk and devouring the whole thing. I wonder why my teenage skin was so bad?!
My Vegan Caesar Salad has the same creamy dressing, a cheesy parmesan and a crunchy crouton, but made with far healthier ingredients and without any animal products. The parmesan recipe is a personal favourite of mine, and can be added to any salad, pasta or veggie dish. This recipe is a real party pleaser and is a great introduction to tempeh, too!

Tomato and Black Bean Soup

Tomato and Black Bean Soup

I'm always inspired to create new soup recipes as the weather gets cooler, but honestly, I could eat this soup all year round. As someone who loves hearty food, I eat soup for two reasons: firstly, to feel warm and full, and secondly, because it provides a solid excuse to eat toast. This ticks both boxes, and is made using delicious black beans, veggies and spices. Make a big batch and store it in the fridge, and have your sourdough ready.

Rice paper rolls are one of my go-to meals when I want something healthy, fresh and light, but at the same time filling and extra tasty. They take a little time and patience to create, but make a fantastic meal for dinner or lunch and are a hit at parties and events. You can use any fillings you have on hand and be as creative as you like, too!

This recipe includes a peanut dipping sauce which can be made in advance, and used in tonnes of other recipes or used as a sauce for your favourite vegan protein. Yum!

Crunchy Corn Fritters

Another day, another vegan breakfast! Corn fritters used to be my go-to order at breakfast cafes, but it's tricky finding a place that does them without eggs, and many even have added cheese and sour cream to this crunchy delight. As regular readers know, I've recently committed to creating a vegan breakfast menu, with versions of my favourite non-vegan snacks that taste as good as the real thing (maybe even better, but let's not brag). Serve these with a tangy relish, vegan sour cream or heap of smashed avocado!

Sweet potatoes are so versatile, perfect for fries, curries, salads and even brownies! This recipe is a healthy twist on stuffed potatoes, which are usually full of greasy meat, thick sour cream and cheese, and are very heavy. It's a great option if you enjoy hearty meals but don't want to fill up on breads and fried food, and is packed with protein and plenty of other good stuff. You can even make a big batch of mince and use it on sandwiches and pasta, too!

Easy Vegan Gnocchi with Basil and Mushrooms

Gnocchi is surprisingly easy to make, given how delicious and mysterious is. I mean, it's sort of like pasta, but made from potatoes, but tastes like a delicious pillow of savoury goodness. It's confusing. My vegan version is cheap to prepare, easy to make and can be frozen until ready for use. This recipe includes a list of the veggies I like to have with gnocchi, but feel free to serve it with vegan cheese, pesto, or anything you have on hand. Yum!
