This soup is really easy to make, has a small kick to it and is can be easily adapted to suit you spice preferences. Cruelty free and great for weeknight dinners.

Made with my lovely friends from Nature's Charm, this recipe is easy, tasty and the perfect celebration treat. My Vegan Crepe Cake combines a stack of crepes made using my classic recipe, layered with Nature's Charm Coconut Whipping Cream and topped with Nature's Charm Chocolate Fudge Sauce (links to products in the list of ingredients).

You can make the crepes in advance to save time before a special event, and serve with your favourite vegan ice-cream. Totally cruelty-free and delicious!

Sweet potato makes for such a versatile ingredient, for salads, curries, sides and even desserts. I decided to create a sweet breakfast recipe using sweet potatoes, as well as (mostly) healthy, wholesome ingredients that taste great and will satisfy your sugar cravings.

You can use any sweet potato of your choice for this creation and substitute the fruit and nut butter with your favourites, but my recipe is a great, simple and tasty place to start. Enjoy for breakfast, dessert, or as a rich vegan snack!

There are only a few types of 'fake' meat I've really enjoyed since going vegan, and I've actually become quite fond of veggie balls, patties and burgers made with beans, spices and veggies rather than faux meat. Apple pie is one of those classic, hearty and comforting desserts that often takes me back to a particular time, place or memory. It's so yummy when served warm with a scoop of ice-cream, and there's not reason vegans have to miss out! My recipe is easy to follow and makes four individual pies or one small share pie, and uses the technique I read about years ago (I wish I remember where!) of microwaving the apple filling prior to cooking the pie in the oven, giving the apple an extra chance to cook through and leaving you with a soft filling and crunchy crust. It's another one of my recipes that also freezes well, so make a batch before a dinner party and reheat in the oven just before your lucky guests arrive!

My Crispy Cauliflower Bowls recipe is a wonderful addition to the vegan kitchen, and is a regular in my house because it's made up for some of my favourite ingredients, tastes AMAZING and is an easy to make and healthy dinner option. Cauliflower, sweet potato, edamame and other ingredients made it a great meal for vegans, vegetarians or those of you trying to eat less meat, as it'll leave you feeling satisfied, satiated and full of plant-based goodies that make up a complete, meat-free diet. If you're eating this as a main the recipe makes two full portions, but it can feed a couple more if you've got other dishes, too.

This is one of my FAVOURITE salad recipes, because it combines all of my must-have elements: it's healthy, crunchy, packed full of flavour and vegan. If you don't have kelp noodles you can substitute them for vermicelli, but I'd highly recommending trying to get your hands on some as they provide such a lovely texture to this crowd-pleaser. Make a big batch and enjoy it throughout the week, and definitely serve it at your next dinner party with some grilled tofu, smashed avocado and sweet potato fries. Yum!
